Food engineering is a multidisciplinary field of applied physical science which combines science, microbiology, and engineering education for food and related industries. It is a technical discipline involved in manufacturing and processing, preservation, packaging, storage and distribution of food materials. It process raw material into finished products. Food engineers control the health and safety of food production by designing and operation food processing plants. Physics, chemistry, and mathematics are fundamental to understanding and engineering products and operations in the food industry.
This website was created to provide you with a wide range of resources in food engineering. Many of these topics are based on teaching experience, research, my undergraduate students graduate projects and postgraduate students thesis.
You will find papers and presentations on topics such as food unit operation, heat and mas transfer and modeling of food processes. If you are a student or an instructor engaged in learning and teaching food engineering, this site includes lecture materials for typical courses taught at undergraduate and postgraduate levels. You will find useful links to departments of food engineering and association and books.
Your feedback is important to me in preparing future additions to this website.
